Bark Barbecue, known for its distinctive blend of Central Texas barbecue techniques with Dominican ingredients, is set to open a full-scale restaurant at 25 Thames Street in Bushwick. The anticipated launch date is February or March 2026.
Founded by pitmaster Ruben Santana, the project marks a significant expansion from his current operation within Time Out Market Dumbo. The new venue will span approximately 8,000 square feet, offering a considerably larger footprint than the food hall stall.
The menu will continue to highlight hallmark dishes such as brisket and chicharrones, alongside smoked carnitas. Patrons can also expect sandwiches featuring pulled pork, fried cheese, and maduros, reflecting Santana’s fusion of Texas barbecue traditions and Dominican flavors.
